Pesto VinaigretteIt all began hereWhen Daragh first came to the United States he made Pesto dressing from scratch. Anyone who came to his house had this dressing on their salads. It wasn’t long before everyone kept telling him to bottle it and sell it at the local farmers market. This was really the first vinaigrette the Matheson Food Co. made. Working from a basic restaurant recipe and using mustard, vinegar oil a little garlic and honey before adding fresh basil pesto. This dressing makes a wonderful pasta salad, potato salad or Italian salad and is a great addition to any BBQ’ed breast of chicken. |
